Grown in Mexico’s mountainous Chiapas region, this biodynamic coffee brings out flavors of nashi pear, pomegranate, and blackcurrant. As the first farm to ever export organic coffee to Europe, it has dedicated part of its land as a biodiverse nature reserve. Furthermore, the owners offer support and education to 30 resident families. Finca Irlanda’s vision goes beyond profit and delivers an exceptional coffee rooted in appreciation and responsibility.
The farmers
Walter Peters, with Finca Irlanda in Chiapas, is a pioneer of biodynamic farming and was the first to be certified by Demeter at the end of the 1960s. Seven years later, in 1967, Finca Irlanda was responsible for the very first export of organic and biodynamic coffee to Europe. Today, the farm is run by his son Alex, although Walter Peters still looks after the coffee trees with the same passion.
From weeding to coffee picking, everything is done by hand, and the farm operates in closed cycles. Compost is especially important: All the coffee cherry husks are composted with earthworms, and the valuable humus is used when planting new coffee trees. This process binds CO₂ and guarantees soil fertility without the need for artificial fertilizers.
Nature
Finca Irlanda is located in the region of Chiapas, which is in southwest Mexico, close to the Guatemalan border. The region has a contrasting landscape of coasts, valleys, mountains, and tropical forests. The climatic conditions in Chiapas make it ideal for diverse and rich agriculture, and it is one of Mexico's most important coffee-producing regions, accounting for 40% of the country's total production.
The farm is located at 1,090 meters in altitude and spans 270 hectares of production. The coffee is grown under tall shade trees in a jungle-like environment. The cultivated varieties are maragogype, bourbon, caturra, catuai, and gesha.
The impact
Walter Peters, with Finca Irlanda in Chiapas, is a true pioneer of biodynamic farming. Biodynamic production is based on the natural relationship between flora, fauna, and their intrinsic environmental dynamics. Taking advantage of the moon phases to establish seasons for sowing and harvesting coffee helps to fully integrate the product optimally into the ecosystem.
Furthermore, a foundation named Peters IAP was created. It works to develop the medical and educational aspects of the area. The finca offers accommodation and free meals to the community, and it runs a school and a kindergarten. This saves the farmers a long journey to school or makes education possible in the first place. In rural areas, due to long distances, it is often almost impossible to comply with Mexico's compulsory education laws.
The taste
No wonder Chiapas is one of the most important regions for coffee cultivation in Mexico; the climatic conditions make it ideal for coffee cultivation. As a pioneer of biodynamic farming, Finca Irlanda not only gained heaps of experience but feels very much connected to nature and the coffee plants. From weeding to coffee picking, everything is done by hand, therefore the selection of ripe coffee cherries is being done very carefully. The result is coffee of the highest quality, produced in harmony with its natural environment.
But that's not all. The Gesha variety used for this coffee is world-famous for its unique cup character and has become one of the most expensive coffee varieties available. If taken care of correctly and cultivated at high altitudes, Gesha coffees develop excellent floral and fruity aromas. This is why Gesha coffees are often used in competitions to showcase exceptional flavor profiles.
